First Birthday Cake Recipe

This first birthday cake recipe is referred to in our house as orange cake - neither of my children like carrots, but they will happily eat this up. As you have probably guessed this is a great carrot cake recipe. first birthday cake, by rick

To make the cake you will need:

* 150g grated carrots * 2 medium eggs * 100g soft brown sugar * 5 tbsp sunflower oil * 100g self raising flour * 1/2 tsp ground cinnamon * 100g any dried fruit/s eg: raisins, chopped apricots, glace cherries (you can do without these)

Heat the oven to 190 C or gas 5.

Mix the eggs and sugar and beat in the oil.

Add dry ingredients by sifting into a bowl to add more air and mix.

Spoon into greased cake tin and bake for 25mins until it is firm to the touch and golden brown.

To decorate the cake you can use traditional icing which is cream cheese, all you need to do for this is mix the cream cheese and the icing sugar together and then straight onto the cake. Make sure you do this on the day as I find it goes a bit funny if left for long and you will need to keep it in the fridge.

Some children don't like the cream cheese icing - mine don't so we often have the cake plain but you could use normal icing for the cake.
