Sounds too good to be true until you try this to die for Chocolate Courgette Cake - don't panic you don't taste the courgettes in the cake they help the cake stay moist. This is a great one for a birthday cake and I like the fact that you feel quite saintly when your children eat it all up!You will need; 120g butter (softened), 125ml sunflower oil, 100g caster sugar, 200g soft brown sugar, 3 eggs beaten, 130ml milk, 350g plain flour, 2 tsp baking powder, 4 tsp cocoa, 450g courgettes peeled and grated finely, 1 tsp vanilla. Line a 20 x 35cm aking tray with baking paper and heat the oven to 190C/ 350F. Mix the butter, oil and brown and caster sugar until fluffy. Add the eggs one at a time and then the milk. Sift and fold the dry ingredients into the mixture. Stir in the grated courgettes and vanilla. Spoon into the baking tray and bake for 35 - 45 minutes. 
Let the cake cool on a rack and then ice it as you want, you could cut it into small squares and ice individual cakes or create a masterpiece of one year old delight. This farm scene is perfect as most one year olds love animals and making their sounds. A friend's daughter could only say 'duck' when it was her 1st birthday so she had a little yellow duck on the top of her cake. She was very excited when she saw it.
