Babys First Birthday Cake

Your babys first birthday cake is special, you will want to make sure you have the camera ready! Just don't expect too much, they will need some help blowing out the candle but leave them to it when it comes to eating the cake. Lots of wipes at the ready for when they have finished and want a cuddle.

For our baby's 1st birthday cake we needed to find one without dairy as he had very bad eczema and we were advised to cut out as much dairy as possible. My mum found this great vegan carrot recipe that was easy to make and very tasty, if you are looking for an egg free and dairy free cake this is definately worth a try.

You will need; 16oz wholemeal flour, 2 tsp mixed spice, 2 tsp baking powder, 8oz grated carrot, pinch salt, 8oz sunflower oil, 8 fl oz apple juice (orange juice works too), 12oz brown sugar and the grated rind and juice of 1 orange.

Heat the oven to gas 2, 150C or 300F.

The easy part of the recipe is that you mix all the ingrediants and then whisk together, thank goodness for electric whisks!

Pour into your greased and lined cake tin - we ended up using a loaf tin and then bake for 45 minutes. Cover it if it's getting too brown, let it cool in the tin and then ice if required.

We didn't ice the cake just left it plain but you can buy vegan 'cream cheese' from health food shops that you can mix with margarine, vanilla essence and icing sugar.
